  • 2 cloves garlic (minced)
  • 1 tsp ginger (grated)
  • 2 tbsp parsley (finely chopped)
  • 2 tbsp tahini
  • 3 tbsp soy sauce
  • 150 g noodles (cellophane, ramen, udon, or soba)
  • 2 heads bok choy (halved or chopped)
  • 810 gyoza (fresh or frozen)
  • Toppings: scallions, sesame seeds, chili oil, lime wedges

Instructions

  1. In a large pot over medium heat, sauté curry paste with minced garlic and grated ginger for about 2 minutes until fragrant.
  2. Stir in tahini and soy sauce; add enough water to reach desired broth consistency and bring to a gentle simmer.
  3. Cook noodles according to package instructions; reserve some noodle cooking water before draining.
  4. Add bok choy and gyoza to the simmering broth; cook for 5-7 minutes until vegetables are tender and dumplings are heated through.
  5. Serve hot and garnish with sliced scallions, sesame seeds, chili oil, lime wedges, and nori sheets if desired.
