- 2 heads bok choy (halved or chopped)
- 8–10 gyoza (fresh or frozen)

- In a large pot over medium heat, sauté curry paste with minced garlic and grated ginger for about 2 minutes until fragrant.
- Stir in tahini and soy sauce; add enough water to reach desired broth consistency and bring to a gentle simmer.
- Cook noodles according to package instructions; reserve some noodle cooking water before draining.
- Add bok choy and gyoza to the simmering broth; cook for 5-7 minutes until vegetables are tender and dumplings are heated through.
