  • 500 grams white bread flour
  • 8 grams salt
  • 50 grams sourdough starter
  • 375 grams water
  • 50 grams brown sugar
  • 120 grams chocolate chips

Instructions

  1. Feed your sourdough starter 4–8 hours before starting.
  2. In a mixing bowl, whisk together flour, cocoa powder, and salt.
  3. Create a well in the dry ingredients; add sourdough starter, water, and brown sugar. Mix to form a rough ball.
  4. Let the dough rest for one hour.
  5. Gently fold in chocolate chips; perform three sets of stretch and folds every 30 minutes.
  6. Cover and ferment overnight until doubled in size (7–12 hours).
  7. Shape the dough and refrigerate for 1–3 hours for the final rise.
  8. Preheat oven to 425°F (220°C) and bake in a Dutch oven for 25 minutes covered, then an additional 20–25 minutes uncovered until golden brown.
  9. Cool on a rack for at least one hour before slicing.
