  • 1.5 lbs boneless skinless chicken thighs
  • 3 tbsp fresh lime juice
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • ½ tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • 812 corn tortillas
  • ½ cup white onion (finely chopped)
  • ½ cup fresh cilantro (chopped)
  • Lime wedges for serving
  • Cotija cheese, avocado slices, salsa verde, pickled red onions

Instructions

  1. In a mixing bowl, combine lime juice, olive oil, minced garlic, cumin, chili powder, smoked paprika, oregano, salt, and pepper. Add chicken thighs and marinate for at least 30 minutes.
  2. Preheat your grill or grill pan over medium-high heat. Grill the marinated chicken for 6–7 minutes on each side until fully cooked.
  3. Warm corn tortillas on the grill for about 30 seconds on each side.
  4. Slice grilled chicken into strips and assemble tacos by adding chicken to warm tortillas topped with onion and cilantro.
  5. Serve immediately with lime wedges.
