  • 1 tablespoon vegetable oil
  • 20 g unsalted butter
  • 2 medium onions, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 400 g chicken breast, cut into bite-size pieces
  • 400 ml chicken stock
  • 2 tablespoons tomato paste
  • 200 ml passata (tomato sauce)
  • 100 g natural yogurt
  • 1 cinnamon stick
  • 2 cardamom pods, split
  • 1 tablespoon paprika
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper

Instructions

  1. Heat oil and butter in a large pot over medium heat. Add cinnamon stick and cardamom pods; sauté for one minute.
  2. Stir in chopped onions; cook until softened and golden (5-6 minutes).
  3. Add minced garlic and grated ginger; cook for one minute.
  4. Mix in paprika, ground coriander, cumin, cinnamon, and cayenne pepper; toast spices for about one minute.
  5. Pour in a quarter of the chicken stock while stirring; add chicken pieces until coated.
  6. Stir in tomato paste, passata, and remaining chicken stock; simmer covered on medium-low heat for about 10 minutes.
  7. Remove lid; continue cooking until sauce thickens slightly (2 minutes). Stir in garam masala and yogurt; simmer for another 1-2 minutes.
