  • 1 tablespoon butter
  • 1 medium onion (chopped)
  • 2 medium carrots (peeled & sliced)
  • 2 sticks celery (chopped)
  • 2 cloves garlic (minced)
  • 4 cups chicken broth
  • 2 cups water
  • 1.5 pounds uncooked chicken breasts (boneless skinless)
  • 1/2 teaspoon Italian seasoning
  • 2 cups uncooked egg noodles
  • Salt & pepper (to taste)
  • 1 tablespoon fresh parsley (chopped)

Instructions

  1. In a large pot over medium-high heat, melt olive oil and butter. Sauté chopped onion, carrots, and celery for 5-7 minutes until softened.
  2. Add minced garlic and cook for another 30 seconds.
  3. Pour in chicken broth and water; add uncooked chicken breasts and Italian seasoning. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Stir in egg noodles and cook uncovered for an additional 8 minutes.
  5. Remove chicken from pot, shred it, then return it to the soup.
  6. Season with salt and pepper, garnish with fresh parsley, and serve hot.
