  • 4 chicken thighs (skinless, bone-in or boneless)
  • 8 cups low-sodium chicken broth
  • 6 cups water
  • 2 Tbsp olive oil
  • 1 medium onion (finely chopped)
  • 2 medium celery sticks (finely chopped)
  • 2 carrots (sliced into rings)
  • 6 oz rotini pasta
  • 3 Tbsp fresh or frozen dill
  • 1 tsp Mrs. Dash
  • 1 Tbsp sea salt

Instructions

  1. In a large soup pot, combine water and chicken broth with sea salt. Bring to a boil.
  2. Add chicken thighs and boil for 20 minutes while prepping vegetables. Skim off any foam.
  3. In a skillet, heat olive oil and sauté onion and celery until softened; transfer to the soup pot.
  4. Add rotini pasta and carrots; cook at a low boil for about 15 minutes until pasta is tender.
  5. Shred cooked chicken and return to the pot along with seasonings and dill.
