  • 6 oz cream cheese, softened
  • 10 oz Ghirardelli white chocolate melting wafers

  2. In a food processor, pulse Lotus Biscoff cookies until finely crumbed.
  3. Reserve 1 tablespoon of crumbs for topping; mix the remaining crumbs with softened cream cheese until combined into a soft dough.
  4. Roll small amounts of dough into balls and place them on the prepared baking sheet. Chill for 30 minutes.
  5. Melt white chocolate wafers in a microwave-safe bowl until smooth.
  6. Dip each chilled truffle into melted chocolate using two forks, allowing excess to drip off, then return to the baking sheet and sprinkle with reserved cookie crumbs.
