  • 75 grams unbleached bread flour (or all-purpose flour)
  • 75 grams water (90℉)
  • 100 grams ripe starter
  • 300 grams filtered water (90℉)
  • 500 grams white bread flour (or unbleached all-purpose flour)
  • 10 grams sea salt

Instructions

  1. Prepare the starter mixture by combining 25g mature starter, 75g flour, and 75g warm water in a mason jar. Cover and let sit overnight at room temperature.
  2. The following morning, mix the ripe starter with 300g warm water in a large bowl until fully combined. Add in the remaining flour and salt until a shaggy dough forms.
  3. Allow the dough to rise covered in a warm place for 5-6 hours until doubled in size.
  4. Shape the dough by folding edges to center and forming into a ball, then let it rise again for another 2-3 hours.
  5. Preheat your oven to 450°F and prepare for baking by placing parchment paper on the counter and scoring the dough.
  6. Bake covered in a Dutch oven for 40 minutes at 425°F, then uncover and bake an additional 5-10 minutes until golden brown.
  7. Cool completely on a rack before slicing.
