  • 50 g cocoa powder
  • 125 g active sourdough starter
  • 11 g salt
  • 170 g chocolate chips

  1. In a mixing bowl, combine warm water and active sourdough starter until mixed. Add brown sugar, cocoa powder, salt, and bread flour; stir until a shaggy dough forms.
  2. Knead the dough on a floured surface for about 10 minutes or use a stand mixer with a dough hook on medium speed for 5-7 minutes until smooth.
  3. Fold in chocolate chips gently until evenly distributed.
  4. Place the dough in the bowl, cover, and let rise at room temperature for about 2 hours or until doubled in size.
  5. Deflate the dough gently on a floured surface, shape into a loaf, and place seam-side down in a loaf pan lined with parchment paper.
  6. Cover again and let rise for another hour while preheating your oven to 375°F (190°C).
