  • 1 pound boneless, skinless chicken breast or thighs
  • 1 yellow onion, diced
  • 2 jalapeños, seeded and chopped
  • 3 cups red enchilada sauce
  • 34 cups low-sodium chicken broth
  • Spices: cumin, taco seasoning, kosher salt, black pepper

Instructions

  1. Prepare all ingredients: dice onions and chop jalapeños and garlic.
  2. In the slow cooker, combine onions, jalapeños, garlic, and place chicken on top.
  3. Add spices and pour in enchilada sauce and chicken broth.
  4. Cover and cook on low for 6 hours or high for 3 hours until chicken is tender.
  5. Shred the chicken with forks and return it to the soup pot.
  6. Stir in cooked rice and lime juice before serving.
