  • 1 cup grated parmesan cheese
  • 1 onion, quartered
  • 1 head garlic
  • 1 cup dry white wine
  • 2 cups dry orzo pasta
  • ½ cup heavy cream or canned full-fat coconut milk
  • Fresh baby spinach
  • Sun-dried tomatoes

Instructions

  1. In a mixing bowl, combine ground meat with Italian seasoning, dijon mustard, parmesan cheese, salt, and pepper; mix well.
  2. Form the mixture into small meatballs (about 1 inch in diameter).
  3. Optional: Brown meatballs in a skillet over medium heat for enhanced flavor.
  4. In the crockpot, layer quartered onion and garlic head at the bottom; place meatballs on top.
  5. Pour in white wine, add butter pieces and rosemary sprig, then cover and cook on low for about 4 hours.
  6. Cook orzo according to package instructions; drain.
  7. Remove garlic head from crockpot; squeeze out cloves into sauce. Stir in heavy cream (or coconut milk), spinach, sun-dried tomatoes, and cooked orzo.
