  • 2 slices bacon
  • 1 large yellow onion
  • 1 cup carrots
  • ½ cup celery
  • 1 tsp salt
  • 1½ tsp black pepper
  • 4 tsp garlic
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • ½ tsp dried parsley
  • 1 tbsp tomato paste
  • 2 (15 oz) cans crushed tomatoes
  • 2 (15 oz) cans cannellini beans
  • 4 cups low sodium chicken broth
  • 6 cups water
  • 1 (16 oz) box of ditalini pasta
  • 1 cup Parmesan Reggiano

Instructions

  1. Cook the bacon in a skillet until crispy. Drain, chop, and add to the slow cooker.
  2. Combine onions, carrots, celery, salt, pepper, garlic, thyme, basil, parsley, tomato paste, crushed tomatoes, beans, broth, and water in the slow cooker. Mix well.
  3. Cover and cook on low for 7-8 hours or high for 4-5 hours. Add uncooked ditalini pasta during the last 30 minutes of cooking.
  4. Serve hot with freshly grated Parmesan cheese on top.
