Crock Pot Chicken Lasagna is a comforting and delicious twist on the classic Italian dish, perfect for family dinners or gatherings. This creamy, cheesy recipe requires minimal effort thanks to the slow cooker, allowing you to savor rich flavors without the hassle of traditional preparation.

  • 3 cups shredded rotisserie chicken
  • 2 jars (15 oz each) alfredo sauce
  • 1½ cups shredded mozzarella cheese
  • 1 box (12 oz) oven-ready lasagna noodles
  • 2½ cups coarsely chopped baby spinach
  • 1 container (32 oz) ricotta cheese
  • 1½ cups shredded parmesan cheese
  • 3 tsp minced garlic
  • 2 eggs

Instructions

  1. Spray a 6-quart crock pot with nonstick cooking spray.
  2. In a bowl, mix mozzarella, parmesan, ricotta, garlic, eggs, salt, pepper, and Italian seasoning until combined.
  3. Pour ½ cup of alfredo sauce into the bottom of the crock pot; layer with 5 noodles.
  4. Spread half of the remaining alfredo sauce over the noodles; add half of the cheese filling and top with half of the chicken and spinach.
  5. Repeat layers once more and finish with the last set of noodles topped with reserved alfredo sauce and remaining spinach.
  6. Cover and cook on low for 4 hours. After cooking, sprinkle mozzarella on top and let sit until melted.
