  • ½ C (114g) unsalted butter
  • 3 cloves garlic, minced
  • 3 tbsp chopped fresh parsley
  • 2 tsp finely chopped fresh thyme leaves
  • 1 tsp kosher salt
  • Black pepper to taste
  • 3 lb (1360g) yellow or Yukon Gold potatoes, sliced 1/16” thick
  • 1218 small sprigs of fresh thyme
  • ½ C (50g) grated parmesan cheese
  • Neutral oil for brushing muffin tin
  • Flaky salt such as Maldon salt

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 12-cup muffin tin with neutral oil.
  2. Melt butter over low heat, then stir in minced garlic, parsley, thyme, salt, and black pepper; let cool.
  3. Thinly slice potatoes (about 1/16 inch thick) and combine with cooled butter mixture in a large bowl.
  4. In each muffin cup, place a sprig of thyme and layer potato slices, sprinkling parmesan cheese between layers.
  5. Cover with foil and bake for 25 minutes; then increase temperature to 425°F (220°C), remove foil, and bake uncovered for 13–15 more minutes until golden brown.
