  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper (to taste)
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • ½ teaspoon thyme
  • Fresh parsley (chopped for garnish)

Instructions

  1. Season chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat olive oil in a skillet over medium-high heat; sear chicken for 4-5 minutes per side until golden brown.
  3. In a saucepan, bring chicken broth and salt to boil; add rice and simmer covered for about 15-18 minutes.
  4. In the skillet, melt butter; whisk in flour until golden. Gradually add milk and chicken broth while stirring until thickened.
  5. Stir in garlic powder, thyme, cheddar cheese, and Parmesan until melted and creamy.
  6. Return seared chicken to the skillet; spoon sauce overtop and simmer on low for about 10 minutes.
  7. Serve over fluffy rice with fresh parsley garnish.
