  • 2 tsp crushed fennel seeds
  • 1 tbsp Italian seasoning
  • 3 tbsp tomato paste
  • 1/2 cup chopped sundried tomatoes
  • 2 cups vegetable stock
  • 3/4 cup heavy cream or coconut cream for a vegan option
  • 1 cup grated cheese alternative like nutritional yeast
  • Fresh basil and lemon wedges for garnish

Instructions

  1. Cook the lentils according to package instructions. For black lentils, use an Instant Pot or simmer on the stovetop until tender.
  2. In a large sauté pan, heat sundried tomato oil over low-medium heat. Sauté diced onion until soft, then add crushed garlic and cook until fragrant.
  3. Add crushed fennel seeds, smoked paprika, and Italian seasoning; sauté briefly to release flavors.
  4. Mix in tomato paste and chopped sundried tomatoes; combine well and set aside.
  5. Drain and rinse cooked lentils under cold water until clear.
  6. Add lentils to the sauté pan along with vegetable stock; simmer uncovered for about 10 minutes until slightly thickened.
  7. Stir in cream or coconut cream and cheese alternative; mix until smooth and creamy.
  8. Let rest for five minutes before serving with fresh basil and lemon wedges.
