  • 400 g cooked linguine pasta
  • 4 cloves garlic (minced)
  • Zest and juice of 1 lemon
  • 1/4 cup extra virgin olive oil
  • 1 cup feta cheese (crumbled)
  • 6 oz. asparagus (cut into inch pieces)
  • 3 tbsp butter
  • 2 cups heavy cream
  • 1 tbsp flour
  • 2 tbsp water
  • 1/2 cup chopped parsley

Instructions

  1. Cook the linguine in salted boiling water until just shy of al dente. Reserve ½ cup of pasta water before draining.
  2. In a bowl, whisk together lemon zest, juice, olive oil, crumbled feta, and black pepper until creamy.
  3. In a skillet over medium heat, sauté minced garlic in olive oil until fragrant, then add asparagus and season with salt and pepper; cook until tender-crisp.
  4. In the same skillet, melt butter over medium heat, then add heavy cream and bring to a simmer. Whisk together flour and water; stir into the cream to thicken.
  5. Combine cooked pasta with the cream sauce, then fold in the lemon feta mixture and asparagus.
