400 g cooked linguine pasta
4 cloves garlic (minced)
Zest and juice of 1 lemon
1/4 cup extra virgin olive oil
1 cup feta cheese (crumbled)
6 oz . asparagus (cut into 1½ inch pieces)
3 tbsp butter
2 cups heavy cream
1 tbsp flour
2 tbsp water
1/2 cup chopped parsley
Cook the linguine in salted boiling water until just shy of al dente. Reserve ½ cup of pasta water before draining.
In a bowl, whisk together lemon zest, juice, olive oil, crumbled feta, and black pepper until creamy.
In a skillet over medium heat, sauté minced garlic in olive oil until fragrant, then add asparagus and season with salt and pepper; cook until tender-crisp.
In the same skillet, melt butter over medium heat, then add heavy cream and bring to a simmer. Whisk together flour and water; stir into the cream to thicken.
Combine cooked pasta with the cream sauce, then fold in the lemon feta mixture and asparagus.
