  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 23 fresh jalapeños, diced
  • 1 can (15 oz) white beans, drained and rinsed
  • 4 cups low-sodium chicken broth
  • 1 cup unsweetened coconut milk
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté chopped onion until translucent; add minced garlic and diced jalapeños.
  2. Add chicken breasts and sear each side for about 5 minutes until browned. Remove from pot and shred once cooled.
  3. Pour in the chicken broth and add white beans; stir to combine and bring to a simmer.
  4. Stir in coconut milk, cumin, chili powder, salt, and pepper. Let simmer for 10-15 minutes.
  5. Return shredded chicken to the pot; adjust seasoning if necessary. Garnish with fresh cilantro before serving.
