  • 2 boneless chicken breasts (9oz/250g each)
  • 1/4 cup flour
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 9oz baby button mushrooms, sliced
  • 3/4 cup heavy cream
  • 3/4 cup chicken stock
  • 1oz freshly grated Parmesan cheese
  • 2 cloves garlic, diced
  • Fresh parsley and chives for garnish

Instructions

  1. Slice each chicken breast horizontally to create four even pieces.
  2. In a shallow dish, mix flour with garlic powder, salt, and pepper. Dredge the chicken pieces in the mixture.
  3. Heat olive oil and butter in a pan over medium-high heat. Cook chicken until golden brown on both sides. Remove from the pan.
  4. In the same pan, add more butter and sauté sliced mushrooms until golden. Add garlic and cook for an additional minute.
  5. Pour in chicken stock and cream; stir in parsley and chives. Let the sauce simmer until slightly thickened.
  6. Add Parmesan cheese and lemon juice, then return chicken to the pan to coat in the sauce.
