  • 2 boneless skinless chicken breasts
  • 2 tsp olive oil
  • 1 1/2 to 2 Tbsp cajun seasoning (divided)
  • 2 Tbsp unsalted butter
  • 3 garlic cloves (minced)
  • 2/3 cup diced tomatoes
  • 1 1/2 cup heavy whipping cream
  • 1/2 cup grated parmesan cheese
  • 2 Tbsp parsley (finely chopped)

Instructions

  1. Cook the linguine in salted boiling water until al dente; drain and set aside.
  2. Beat chicken breasts to an even thickness and season with cajun seasoning.
  3. In a skillet, heat olive oil over medium-high heat and sear chicken until golden brown and cooked through; slice when done.
