  • 11/2 lbs Little Potatoes Company White Creamer potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • Fresh parsley (for garnish)

Instructions

  1. Poke each potato with a fork and microwave in a bowl for 8 minutes (4 minutes per side) to soften.
  2. Preheat your oven to 425°F (220°C) and prepare a parchment-lined baking sheet.
  3. Toss the microwaved potatoes with olive oil, salt, and pepper until well-coated.
  4. Smash each potato to about 3/8" thickness and arrange them on the baking sheet.
  5. Bake for 12 minutes, flipping halfway through, until both sides are golden brown.
  6. Garnish with fresh parsley and serve warm.
