  • 4 salmon fillets (7 oz each)
  • 4 oz frozen spinach
  • 8 oz lump crab
  • 1216 medium shrimp
  • Boursin Shallot & Chive cheese (5 oz)
  • Parmesan cheese (1/4 cup)
  • 1 jalapeno
  • Garlic (2 tsp)
  • Olive oil (2 tbsp)
  • Cajun seasoning and smoked paprika

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Season salmon fillets with oil, salt, pepper, smoked paprika, and Cajun seasoning. Create a slit in each fillet for stuffing.
  3. Squeeze excess liquid from thawed spinach and mix it with Boursin cheese, crab meat, jalapeno, parmesan, and garlic.
  4. Toss shrimp with the remaining oil and seasonings.
  5. Stuff the salmon with the crab mixture and top with seasoned shrimp.
  6. Bake for 15-17 minutes until the salmon is cooked through.
  7. Serve hot with lemon wedges.
