  • 2 whole heads of garlic, peeled
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 tablespoons butter
  • 6 cups chicken or vegetable broth
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper, to taste
  • 4 egg yolks
  • 1/2 cup grated Parmesan cheese
  • Crusty bread, for serving
  • Fresh parsley, optional for garnish

Instructions

  1. In a large pot, heat olive oil and butter over medium heat. Add chopped onion and sauté until softened (about 5 minutes).
  2. Add whole garlic cloves and cook gently for 2-3 minutes, stirring frequently.
  3. Pour in chicken or vegetable broth along with thyme sprigs and bay leaves; bring to a boil then reduce heat to simmer for 30 minutes.
  4. Remove thyme and bay leaves; season with salt and pepper.
  5. Whisk together egg yolks and Parmesan cheese in a small bowl.
  6. Temper the egg mixture by adding a ladle of hot soup while whisking continuously.
  7. Stir the tempered egg mixture back into the soup pot; simmer for another 5 minutes until slightly thickened.
  8. Serve hot with crusty bread and garnish with fresh parsley if desired.
