  • 3 lb boneless chuck roast
  • 3 lbs yellow onions
  • 2 cloves garlic
  • 1 cup red wine or beef stock
  • 2 ½ cups beef stock
  • Olive oil, salt, pepper, maple syrup (or brown sugar), flour, rosemary, bay leaf

Instructions

  1. Preheat the oven to 325°F (165°C). Season the chuck roast with salt and pepper.
  2. Heat olive oil in a Dutch oven over medium-high heat and sear the roast for about 4-5 minutes on each side until browned. Remove and set aside.
  3. In the same pot, sauté sliced onions over medium heat for 20-25 minutes until caramelized; add minced garlic in the last minute.
  4. Stir in maple syrup and flour; cook for another minute before deglazing with red wine.
  5. Return the roast to the pot, add beef stock until submerged, and toss in rosemary and bay leaf.
  6. Cover and slow-cook in the oven for about 3 hours until fork-tender.
