  • 1/2 cup softened butter
  • 1 cup sugar
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 2 Tbsp brown sugar
  • 1 1/2 tsp vanilla extract
  • 3/4 tsp ground cinnamon
  • 1/4 tsp salt
  • 2 Tbsp sour cream (or Greek yogurt)
  • 1 cup flour (for crumb topping)
  • 1 cup brown sugar (for crumb topping)
  • 6 Tbsp cold butter (for crumb topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 8×4 loaf pans.
  2. Mash bananas with brown sugar, vanilla extract, and cinnamon in a bowl.
  3. Cream softened butter and sugar until light and fluffy in a large bowl.
  4. Add eggs one at a time, mixing well after each addition.
  5. Sift in flour, baking soda, and salt; mix gently until just combined.
  6. Fold in sour cream (or Greek yogurt), then add the mashed banana mixture.
  7. Pour batter into prepared pans and sprinkle crumb topping made from flour, brown sugar, cold butter, and cinnamon over the top.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
