  • 3 ½ lbs beef chuck, cut into 2" pieces
  • 4 tablespoons unsalted butter
  • 1 yellow onion, chopped
  • 3 large carrots, peeled and chopped
  • 5 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 3 tablespoons all-purpose flour
  • 2 cups bold apple vinegar (like Burgundy)
  • 2 cups beef stock
  • Fresh thyme and bay leaves
  • 10 oz frozen pearl onions
  • 16 oz cremini mushrooms, quartered

Instructions

  1. Preheat your oven to 350°F.
  2. In a Dutch oven, cook chopped bacon over medium-low heat until browned. Remove and set aside.
  3. Season beef cubes with salt and pepper; sear in the same pot until browned on all sides.
  4. Lower heat and add butter; sauté onions and carrots for 2-3 minutes, then add garlic and tomato paste. Cook until darkened.
  5. Sprinkle flour over the mixture and stir well. Add apple vinegar, beef stock, bouillon, thyme, bay leaves, bacon, and seared beef.
  6. Cover and bake for about 2½ hours.
  7. In a skillet, melt remaining butter; brown mushrooms and pearl onions before adding them to the pot.
  8. Bake uncovered for another 45-60 minutes until everything is tender.
