  • 1 cup rolled oats
  • 1/2 cup applesauce or 1 small grated apple
  • 1 large egg
  • 1/2 tsp cinnamon
  • 1 tbsp honey or maple syrup (optional)
  • 1/2 tsp baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine cottage cheese, rolled oats, applesauce (or grated apple), egg, cinnamon, honey (if using), baking powder, and salt. Mix until well blended.
  3. Let the mixture rest for about 5 minutes to allow the oats to absorb moisture.
  4. Scoop the batter into a mini muffin pan, filling each cup nearly to the top.
  5. Bake for 18–20 minutes until set and lightly golden.
  6. Allow to cool in the pan for a few minutes before transferring to a wire rack.
