  • 1/2 cup olive oil
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup lime juice
  • 2 cloves minced garlic
  • 1 teaspoon red pepper flakes
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 2 teaspoons salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a small mixing bowl, whisk together olive oil, cilantro, lime juice, garlic, red pepper flakes, cumin, paprika, salt, and black pepper to create the marinade.
  2. Place chicken thighs in a large mixing bowl and pour the marinade over them. Toss with kitchen tongs until well coated.
  3. Allow the chicken to marinate for at least 15 minutes (or up to 2 hours if refrigerated).
  4. Heat a skillet over medium-high heat and add a teaspoon of oil.
  5. Cook the marinated chicken thighs for 5–6 minutes on each side until fully cooked and an internal temperature of 165°F is reached.
  6. Serve hot with extra lime juice and chopped cilantro on top.
