  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup vanilla or mint-flavored protein powder
  • 2 tablespoons maple syrup or honey
  • 1/2 teaspoon peppermint extract
  • 23 tablespoons almond milk
  • 1 cup dark chocolate chips (or chopped dark chocolate)
  • 1 teaspoon coconut oil (optional)
  • 12 drops green food coloring (optional)
  • Crushed chocolate or mint chocolate chips (optional, for garnish)

Instructions

  1. In a food processor, blend soaked cashews, shredded coconut, protein powder, maple syrup, and peppermint extract until smooth. Add almond milk gradually to achieve dough-like consistency.
  2. Roll the mixture into 1-tablespoon balls and place them on a parchment-lined baking sheet.
  3. Freeze for 15-20 minutes to firm up.
  4. Melt dark chocolate chips in a microwave-safe bowl until smooth.
  5. Dip each chilled ball into melted chocolate, coating fully. Optionally sprinkle with crushed mint chocolate chips.
  6. Refrigerate for another 15-30 minutes until set.
