  • 1/4 cup cashew butter (or almond/sunflower seed butter)
  • 23 tbsp milk (dairy or non-dairy)
  • 1/4 cup mini chocolate chips
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 cup milk chocolate chips
  • 1 tsp coconut oil

Instructions

  1. In a bowl, mix almond flour, protein powder, and salt.
  2. In another bowl, combine cashew butter, milk, honey/maple syrup, and vanilla until smooth.
  3. Mix wet ingredients into dry until fully combined.
  4. Fold in mini chocolate chips.
  5. Adjust consistency with more milk if needed.
  6. Roll into 1-inch balls and place on parchment-lined plate.
  7. Chill for at least 30 minutes to firm up.
  8. Melt chocolate chips with coconut oil; dip each ball into melted chocolate.
  9. Sprinkle extra mini chocolate chips on top; refrigerate until set.
  10. Serve chilled or at room temperature.
