Ingredients

Scale
  • 1 1/2 cups ripe mashed bananas (34 medium)
  • 1/2 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup melted unsalted butter
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup Greek yogurt (or coconut yogurt for dairy-free)
  • 1 1/3 cups all-purpose flour (or gluten-free baking flour)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup mini chocolate chips (plus extra for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a loaf pan by greasing it.
  2. In a large bowl, mix mashed bananas, melted butter, brown sugar, granulated sugar, eggs, vanilla extract, and Greek yogurt until well combined.
  3. In another bowl, whisk together flour, baking soda, and salt.
  4. Gently fold the dry mixture into the wet mixture using a spatula until just combined; some lumps are fine.
  5. Fold in mini chocolate chips and reserve some for topping.
  6. Pour batter into the prepared loaf pan and sprinkle remaining chocolate chips on top.
  7. Bake for about one hour or until a toothpick inserted comes out clean. Allow cooling before slicing.
