  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn (canned or thawed frozen)
  • 1/4 cup red bell pepper, diced
  • 1 jalapeno pepper, diced (adjust for spice level)
  • 1 cup Monterey Jack cheese, shredded
  • 1012 egg roll wrappers
  • Oil for frying

Instructions

  1. In a mixing bowl, combine shredded chicken, black beans, corn, diced red bell pepper, jalapeno pepper, and Monterey Jack cheese until well mixed.
  2. Lay an egg roll wrapper flat and place 2-3 tablespoons of the filling in the center. Fold the bottom over the filling, then fold in the sides and roll tightly from bottom to top. Seal edges with water.
  3. Heat oil in a frying pan over medium heat. Fry eggrolls until golden brown on all sides. Drain on paper towels.
