  • 4 packets cooked udon noodles (7 ounces each)
  • 2 tablespoons avocado oil
  • 1 pound chicken breast (cut into bite-sized pieces)
  • 2 garlic cloves (minced)
  • 1 yellow onion (sliced)
  • 2 cups shredded cabbage
  • 2 carrots (cut into matchsticks)
  • 5 mushrooms (sliced)
  • 2 green onions (sliced)
  • ¼ cup dark soy sauce
  • ¼ cup oyster sauce
  • 2 tablespoons honey
  • ½ teaspoon red chili flakes
  • ¼ teaspoon black pepper

Instructions

  1. Mix all the sauce ingredients in a small bowl and set aside.
  2. Heat oil in a large pan over medium-high heat. Sauté onion and garlic until fragrant.
  3. Add chicken pieces and cook until golden brown.
  4. Stir in cabbage, carrots, and mushrooms; sauté for a few minutes until tender yet crisp.
  5. Cook udon noodles according to package instructions; drain and rinse briefly under cold water.
  6. Combine the cooked noodles with the stir-fried vegetables and chicken. Pour the sauce over everything and toss well.
