  • 1/2 medium onion
  • 1/2 cup full-fat sour cream
  • 2/3 cup chicken broth
  • 3 tablespoons olive oil (divided)
  • 1 tablespoon butter
  • 1/2 teaspoon garlic powder
  • Salt & pepper (to taste)
  • Flour (for dredging)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 3 cloves garlic (minced)

Instructions

  1. Cut chicken into 1-inch pieces; season with garlic powder, salt, and pepper; coat in flour.
  2. Heat 2 tablespoons olive oil in a deep skillet over medium-high heat; cook chicken in batches until browned (about 3 minutes per side). Set aside.
  3. Add butter to the skillet; sauté mushrooms and onions for 6-8 minutes until soft.
  4. Stir in Dijon mustard, Worcestershire sauce, and minced garlic; cook for 1 minute.
  5. Pour in chicken broth; scrape browned bits from the pan; return chicken to skillet and simmer for 2 minutes.
  6. Stir in sour cream; heat through without boiling. Adjust seasoning as needed before serving.
