  • 3 large chicken breasts
  • 8 ounces cremini mushrooms
  • 1/2 cup dry sherry
  • 1.5 cups heavy cream
  • 6 slices Muenster cheese
  • 1 tablespoon olive oil
  • 4 tablespoons butter (1/2 stick) (divided)
  • 2 cloves garlic (minced)
  • Flour for dredging + 2 tablespoons flour
  • Salt & pepper (to taste)

Instructions

  1. Preheat the oven to 375°F.
  2. Cut chicken breasts lengthwise into cutlets, season with salt and pepper, then dredge in flour.
  3. Brown the chicken in a skillet with olive oil and butter; transfer to a casserole dish.
  4. Sauté sliced mushrooms in the same skillet until seared; add to the casserole over the chicken.
  5. In the skillet, make a cream sauce by melting butter, stirring in flour and garlic, adding sherry followed by cream; cook until thickened.
  6. Pour sauce over chicken and mushrooms, top with Muenster cheese slices.
  7. Cover with foil and bake for 20 minutes; remove foil and broil until cheese is golden brown.
