  • 1 lb fresh gnocchi
  • 1 cup butternut squash or pumpkin puree
  • 4 cloves garlic
  • 1 medium onion
  • 1/4 cup heavy cream
  • 6 sun-dried tomatoes (drained)
  • Grated Parmesan cheese
  • 3 tablespoons flour
  • 1 teaspoon paprika
  • 1 teaspoon basil
  • 1 teaspoon fine sea salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons oil from the sun-dried tomato jar
  • 1 1/4 cups chicken broth
  • 1/4 teaspoon basil
  • 1/8 teaspoon paprika
  • 2 tablespoons sour cream
  • Salt and pepper (to taste)

Instructions

  1. Prepare ingredients: chop sun-dried tomatoes, grate Parmesan cheese, dice onion, and finely chop garlic.
  2. Coat the chicken: mix flour with paprika, basil, salt, and pepper in a bowl. Toss chicken pieces until evenly coated.
  3. Cook the chicken: heat oil in a large frying pan over medium-high heat. Cook chicken until golden brown; transfer to a plate.
  4. Make the sauce: reduce heat, sauté onion until softened, add garlic for fragrance. Mix in butternut squash puree, broth, cream, basil, and paprika; whisk until smooth.
  5. Cook gnocchi: add gnocchi to the sauce and cook as per package instructions.
  6. Combine: stir in sun-dried tomatoes, Parmesan cheese, and sour cream until melted. Add chicken back to the pan and mix well.
