  • 2 cups shredded cheddar cheese

Instructions

  1. In a large skillet over medium heat, sauté the diced onion in olive oil until translucent (about 3-4 minutes). Add minced garlic and cook for an additional minute.
  2. Stir in the ground beef and cook until browned (5-7 minutes). Drain excess fat.
  3. Mix in black beans, diced tomatoes, and taco seasoning; simmer for about five minutes.
  4. Cook cheese tortellini in boiling salted water according to package instructions (3-5 minutes), then drain.
  5. Combine cooked tortellini with the beef mixture in a large bowl.
  6. Preheat oven to 350°F (175°C). Spread a thin layer of enchilada sauce at the bottom of a baking dish. Pour the tortellini mixture into the dish and cover with remaining enchilada sauce.
  7. Top with shredded cheddar cheese and cover with foil. Bake for 20 minutes; remove foil and bake for an additional 10-15 minutes until bubbly.
