  • 12 ounces sharp cheddar cheese (shredded)
  • 45 medium Yukon gold potatoes (peeled and thinly sliced)

Instructions

  1. Preheat oven to 400°F. Slice the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
  2. Lower the oven temperature to 375°F and grease a 9×13 inch baking dish.
  3. In a skillet, melt butter over medium heat. Whisk in flour to create a roux; cook until golden.
  4. Gradually add milk while whisking until thickened (about 3-5 minutes). Stir in roasted garlic, paprika, thyme, rosemary, salt, and pepper.
