  • 2¼ cups plain flour (all-purpose)
  • 1 teaspoon baking soda
  • ½ cup plain yogurt
  • ¾ cup full-fat milk
  • 2 large eggs
  • 50 grams unsalted butter, melted

Instructions

  1. Preheat oven to 180°C (350°F) and grease a loaf pan.
  2. In a small bowl, mix rosemary, parsley, oregano, thyme, garlic, olive oil, and salt to form a thick herb mixture.
  3. In a medium bowl, whisk flour, baking soda, and salt until combined.
  4. In another bowl, blend yogurt, milk, eggs, melted butter, and extra garlic until smooth.
  5. Combine wet ingredients into dry ingredients until just mixed; avoid overmixing.
  6. Layer one-third of the batter in the pan followed by dollops of herb mixture and cheese slices; repeat layers.
  7. Bake for about 50 minutes until golden brown; cool before slicing.
