Ingredients

Scale
  • 4 chicken thighs (bone-in, skin-on)
  • 1 tablespoon vegetable oil
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon minced ginger
  • 4 cloves minced garlic
  • 2 cups chicken broth
  • 2 cups jasmine rice
  • Chopped green onions for garnish
  • Fresh cilantro for garnish

Instructions

  1. Pat chicken thighs dry and season generously with salt and pepper.
  2. Heat vegetable oil in a large pot over medium-high heat. Sear chicken skin-side down until golden brown (5-7 minutes).
  3. Flip chicken; add soy sauce, brown sugar, garlic, and ginger. Stir gently to combine.
  4. Pour in chicken broth and bring to a gentle boil. Reduce heat to low, cover, and simmer for about 20 minutes until cooked through.
  5. Meanwhile, rinse jasmine rice under cold water and cook in a separate pot with water until fluffy (15-20 minutes).
  6. For thicker broth, mix cornstarch with water and stir into the broth; cook for an additional 2-3 minutes.
  7. Serve sliced chicken over rice, topped with broth and garnished with green onions and cilantro.
