  • 1/2 cup sour cream
  • 1 cup granulated sugar (for caramel)
  • 6 tablespoons unsalted butter (for caramel)
  • 1/2 cup heavy cream (for caramel)
  • 1 teaspoon sea salt (for caramel)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the brownie layer by melting butter and mixing with 2 cups of granulated sugar. Add 4 eggs and 1 teaspoon of vanilla extract.
  3. In another bowl, combine 1 cup of flour, 1 cup of cocoa powder, and 1/2 teaspoon of salt; fold into wet ingredients.
  4. Bake brownies for 25-30 minutes in a greased 9-inch springform pan until set.
  5. For the cheesecake layer, beat together 16 oz of softened cream cheese and 1 cup of sugar until smooth; add eggs one at a time, then mix in 1/2 cup of sour cream.
  6. Pour the cheesecake mixture over cooled brownies; bake for an additional 30-35 minutes until set.
  7. To make the caramel sauce, melt 1 cup of sugar over medium heat until golden brown; stir in 6 tablespoons of butter and 1/2 cup of cream along with 1 teaspoon of sea salt.
  8. Drizzle caramel over the cooled cheesecake and refrigerate for at least two hours before serving.
