  • 240 g all-purpose flour
  • 90 g granulated sugar
  • 100 g dark brown sugar
  • 110 g vegetable oil
  • 140 g sour cream
  • 100 g butter (for frosting)
  • 165 g powdered sugar
  • 25 g butter (for caramel sauce)
  • 100 g heavy cream
  • 1 tbsp water
  • Pinch of salt
  • 1 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground all spice
  • 2 eggs (room temperature)
  • 1 tsp vanilla extract

Instructions

  1. Begin by making the salted caramel sauce: In a saucepan over medium heat, combine 90 g granulated sugar and 1 tbsp water. Stir until dissolved, then simmer until amber-colored. Add 25 g butter, 100 g heavy cream, and a pinch of salt; stir until smooth and let cool.
  2. Preheat oven to 350°F (175°C). Whisk together flour, baking powder, baking soda, salt, cinnamon, and allspice in one bowl.
  3. In another bowl, mix granulated sugar, dark brown sugar, grated apples, and vegetable oil until combined. Add eggs one at a time followed by sour cream and vanilla extract.
  4. Combine wet and dry ingredients gently; pour into a prepared baking pan.
  5. Bake for about 45 minutes or until a toothpick comes out clean. Cool completely before frosting.
  6. For the buttercream: Beat butter until fluffy; gradually add powdered sugar and mix in caramel sauce until smooth.
  7. Frost cooled cake generously with the caramel buttercream.
