  • 1/2 cup mayonnaise
  • 20 medium shrimp (peeled and deveined)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon hot sauce
  • 2 teaspoons smoked paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon granulated sugar (optional)
  • 2 tablespoons olive oil
  • 1 jalapeño (thinly sliced)
  • 2 tablespoons chopped fresh chives
  • Lemon wedges (for serving)

Instructions

  1. Hard boil the eggs by placing them in a saucepan covered with water. Bring to a boil, then remove from heat and let sit covered for 12 minutes. Cool and peel.
  2. Slice eggs in half lengthwise and scoop yolks into a bowl. Mash yolks and mix with mayonnaise, mustard, hot sauce, and spices until smooth.
  3. Toss shrimp with remaining spices. Sear in olive oil over medium-high heat for about 2 minutes on each side until cooked through.
  4. Fill egg whites with yolk mixture using a piping bag or spoon. Top each with a shrimp slice of jalapeño and sprinkle fresh chives.
  5. Serve chilled with lemon wedges for added zest.
