  • 2/3 cup cooked, mashed butternut squash
  • 1/2 pound mezzi rigatoni (or small-shaped pasta)
  • 1 1/4 cup shredded cheddar cheese
  • 3/4 cup shredded smoked gouda cheese
  • 1/2 cup shredded parmesan cheese
  • 1/4 cup unsalted butter
  • 1/4 cup flour
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1/8 teaspoon ground pepper
  • 1/4 teaspoon tabasco sauce

Instructions

  1. Cook the pasta in salted boiling water until al dente; drain.
  2. In a separate pan, melt butter over medium heat. Whisk in flour until smooth; gradually add milk while whisking continuously until thickened.
  3. Stir in cheddar, gouda, and parmesan cheeses until melted. Add salt, nutmeg, pepper, and tabasco sauce for flavor.
  4. Combine cooked pasta with cheese sauce and mashed butternut squash until well coated.
  5. Transfer to a baking dish and bake at 350°F (175°C) for 20-30 minutes until bubbly.
