  • 1/2 cup hot buffalo sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups cooked brown rice
  • 1 cup corn kernels (fresh or canned)
  • 1 cup black beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced red onion
  • 1 avocado, sliced
  • 1/4 cup ranch dressing
  • Fresh cilantro for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Mix olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper in a bowl.
  3. Coat chicken breasts with the seasoning mixture.
  4. Bake seasoned chicken for 20-25 minutes until cooked through.
  5. Let chicken rest before slicing it into strips.
  6. In a large bowl, combine cooked brown rice, corn, black beans, cherry tomatoes, and red onion.
