  • 1 cup shredded cheese mix (mozzarella and Parmesan)
  • 1/2 cup oil-packed sun-dried tomatoes (divided)
  • 1/2 cup fresh basil (chopped)
  • 1/2 cup olives (chopped)
  • 2 cloves garlic (minced)
  • 2 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup panko breadcrumbs
  • 1 tbsp butter
  • 1 fresh tomato (diced for garnish)

Instructions

  1. Prepare the sun-dried tomatoes by dividing them into two portions; chop one portion for mixing and set aside the other for garnishing.
  2. In a large bowl, combine softened cream cheese, shredded cheese, chopped sun-dried tomatoes, basil, olives, garlic, oregano, salt, and black pepper. Mix until well combined.
  3. Shape the mixture into a ball and wrap it tightly in plastic wrap. Chill in the refrigerator for at least 30 minutes.
  4. Melt butter in a skillet over medium heat and toast panko breadcrumbs until golden brown.
  5. Unwrap the chilled cheese ball and roll it in the toasted breadcrumbs until fully coated.
