  • 5 tablespoons butter
  • 1/4 teaspoon vanilla extract
  • 10 cups mini vegan marshmallows (divided)
  • 6 cups Rice Krispies cereal (cinnamon sugar flavored recommended)
  • 1/2 teaspoon fine sea salt
  • 1/2 can dulce de leche

Instructions

  1. Prepare a 9×9-inch pan by spraying it with non-stick spray and lining it with foil or parchment paper.
  2. In a large pot over medium heat, melt the butter until golden brown and fragrant.
  3. Remove from heat, add salt and 8 cups of mini vegan marshmallows, stirring until melted. Return to low heat if necessary.
  4. Mix in vanilla extract until smooth.
  5. Pour the melted mixture over the Rice Krispies in a large bowl and stir until well combined.
  6. Fold in remaining mini marshmallows while warm for extra gooeyness.
  7. Press half of the mixture into the prepared pan, spread dulce de leche on top, then layer with the remaining Rice Krispies mixture.
  8. Let set at room temperature until completely cool before cutting into squares.
