  • 1/2 teaspoon garlic powder
  • Salt & pepper (to taste)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 medium onion (chopped)
  • 3/4 cup low-sodium chicken broth
  • 1 package (5.2 oz) Boursin Fine Herbs & Garlic cheese (softened)
  • Optional: Chopped parsley for garnish

Instructions

  1. Cut chicken breasts in half lengthwise to create four thinner pieces. Season with garlic powder, salt, and pepper.
  2. Heat olive oil and butter in a skillet over medium-high heat. Cook the seasoned chicken for about 5-6 minutes on each side until fully cooked; transfer to a plate.
  3. In the same skillet, sauté chopped onions for about 5 minutes until softened.
  4. Pour in chicken broth and add softened Boursin cheese; stir until smooth. Allow it to simmer for 5 minutes.
  5. Return the chicken to the skillet and warm through for a couple of minutes, adjusting sauce thickness with additional broth if necessary.
  6. Taste and adjust seasoning before serving.
