  • 3 tbsp (38 g) granulated white sugar
  • 1/2 tsp vanilla
  • 1/4 cup (50 g) granulated white sugar
  • 2 tsp (3 g) black cocoa powder
  • 1 1/2 cups (188 g) all-purpose flour, spooned and leveled
  • 1/2 cup (40 g) black cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup (168 g) unsalted butter, softened
  • 3/4 cup (165 g) light brown sugar, packed
  • 1/4 cup (50 g) granulated white sugar
  • 2 egg yolks, at room temperature
  • 1 1/2 tsp vanilla

Instructions

  1. Prepare the Cheesecake Filling: In a bowl, mix cold cream cheese with granulated sugar and vanilla until smooth.
  2. Make the Cookie Dough: Combine granulated sugar, black cocoa powder, flour, baking powder, and salt in one bowl. In another bowl, cream softened butter with light brown sugar until fluffy. Add egg yolks and vanilla, then gradually mix in the dry ingredients until just blended.
  3. Assemble Cookies: Preheat oven. Scoop dough, flatten slightly, add cheesecake filling, encase it with more dough, and roll into a ball.
  4. Coat and Bake: Roll cookie balls in black cocoa sugar before placing on lined sheets. Bake at 350°F (175°C) for 10-12 minutes.
  5. Cool: Let cookies cool briefly before transferring to wire racks.
