  • 1 ½ cups chopped yellow onion
  • 1 red bell pepper, chopped
  • 8 ounces cremini mushrooms, chopped
  • 2 medium zucchini, chopped
  • 4 cloves garlic, minced
  • 48 ounces marinara sauce
  • 1 teaspoon dried Italian seasoning
  • 5 ounces baby spinach, coarsely chopped
  • 1 egg
  • 1 cup ricotta cheese
  • 9 oven-ready lasagna noodles
  • 16 ounces shredded mozzarella cheese
  • ½ cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 375°F.
  2. In a large skillet, heat olive oil over medium-high heat. Sauté onions, bell pepper, mushrooms, and zucchini until softened (7-8 minutes). Add garlic and cook for another 30 seconds.
  3. Stir in marinara sauce and seasonings; simmer for about 15 minutes before adding spinach.
  4. Mix ricotta and egg in a bowl until combined.
  5. In a baking dish, spread some sauce on the bottom. Layer noodles, followed by sauce, ricotta mixture, and cheeses. Repeat layering twice more and finish with noodles and remaining sauce and cheese.
  6. Cover with foil and bake for about 35 minutes. Uncover and bake for an additional 10-15 minutes until bubbly and golden.
